After all, the invention of New Haven-style apizza in the Elm City was one of the greatest advancements in Nutmeg State cuisine. While thin-crust, coal-fired Neapolitan-style apizza reigns supreme in much of the state, there's another type of pizza that has its roots in Connecticut and has quite the cult following: hot oil pizza. This unique spin on pizza is available at Colony Grill and is such a big hit that the restaurant chain has expanded to four locations in Connecticut and even several outside of the state.
